My two big obsessions last year were goats cheese and eggs. For those of you who don’t know, I had a massive phobia of egg yolks for some strange reason. Anyway, that’s over now and almost every week I try to make a new type of egg dish. My latest creation (if you can call it that) combines my new love of goats cheese. Fried eggs with goat’s cheese.
It’s a simple dish to make and has become my go-to egg dish to make when I don’t have enough time to make Shakshuka but I’ve more than enough time to make porridge. I make it for one but it could be easily doubled for 2 people.
First, fry a small onion and garlic clove in some olive oil. Add some spices (1/2 tsp chilli powder, 1/4 tsp turmeric, 1/2 tsp cumin) and let the onions get soft (Approx 5-6min).
Next, add about 8-10 chopped cherry tomatoes and cover the pan for another 5mins.
Add the goat’s cheese and stir into the mixture until it melts. My favourite goat’s cheese right now is an Irish brand called Bluebell Falls. They do some absolutely fabulous flavours. My two favourites are the honey, garlic & thyme and the pepper, mixed herbs & garlic.
Last but not least, crack two eggs into the pan and fry until the whites are set.
That’s it. Not the prettiest looking dish I’ve ever made but it tastes good. Fried eggs with goat’s cheese.

Fried Eggs with Goat's Cheese
Ingredients
- 50 Goats Cheese
- 8 Cherry Tomatoes
- 2 Eggs
- 1/2 Onion
- 1 Garlic
- 1 Olive Oil
Instructions

Fry onions, garlic and the spices in oil for 5-6mins

Add chopped cherry tomatoes and cook for another 5 mins.

Add goats cheese and cook until it melts.

Crack your eggs in the pan and fry until set.
